Chef's Requested Beef for Stew Post-Haste Pot Pie

Frozen mixed vegetables12 ounce package
Frozen diced potatoes2 cups
Brown gravy12 ounce jar
Salt and PepperTT
Sour cream_ cup
Heavy cream1 cup
9" Frozen pie crusts2

Method
Prepare casserole dish by coating liberally with pan spray or shortening.
Take one pie crust and press into casserole dish.
In hot sauce pan, cook beef cubes until browned on all sides.
Add onions and cook until translucent.
Add mushrooms, vegetables, and potatoes.
Stir in gravy and reduce slightly.
Adjust seasonings.
Add sour cream and heavy cream.
Spoon mixture into prepared casserole dish.
Top with remaining pie crust.
Seal edges, pierce with knife.
Brush with egg wash if desired.
Bake at 375° until crust is golden brown and filling is hot throughout.
Allow to rest 5 minutes.
Serve.
